Now mix it well and watch it by pressing it in your hand. If the dough starts forming like laddus after pressing it with hands, then it means that the quantity of ghee is right. If not, then add a little more ghee. Now add water gradually and knead the dough, the dough should neither be too hard nor too soft. Now cover the dough and keep it aside so that the dough gets set. Now heat oil in a pan. Then add ginger paste, coriander, turmeric powder, cumin powder, salt, cashew nuts and raisins and mix well. Then fry them for few minutes. After this add potatoes and peas in it and mix it well and fry it for some time.

Now make small balls of the kneaded dough. After this keep them rolling and fill the prepared stuffing in them one by one. When all the samosas are ready, heat oil in a pan and fry the samosas in it. When they turn brown, take them out. Your hot samosas are ready.
